My name is Bethan. I am a flavour fanatic, especially when it comes to drinks.
My interest was piqued in December 2010 after a visit to the frozen Loire Valley. There I discovered the exhilaratingly tart and intense Chenin Blanc wines from Domaine Huet. The unforgettable flavours, combining bracing acidity with natural sweetness, all balanced in perfect harmony, were mesmerising.
Complexity, nuance and above all great balance is what I search for in drinks of all kinds. When I became pregnant a few years later and could no longer drink my favourite wines, this didn’t change. But the non-alcoholic options available were not quite hitting the spot.
I wanted bold, flavoursome, not too sweet. And beyond flavour, I wanted a drink that made me feel like I was having a special treat. Something made with the same level of care and attention as a craft alcoholic drink.
I had my eyes and ears open for ideas when I came across the world of drinking-vinegars: heritage beverages with fascinating stories originating from the 1700s and starting to make an appearance on bar menus in New York and London. I was captivated. It was just the balanced flavour profile I was after. Exploring them more, I discovered Shrubs, Switchels and Oxymels too.
I was hooked and could not stop making them in my kitchen. And so Mother Root was born: a range of flavourful, full-strength drinking-vinegars, made from recipes rooted in the past, revived in Peckham.
