* Making a honey syrup is easy. To a small pan add honey and water in the ratio of 2:1. Heat gently until combined. Let cool. Then store in the fridge until you’re ready to use it.
Add ingredients to a cocktail shaker (or jam jar). Shake. Then fill with cubed ice and shake again, hard, for 8-10 seconds. Double strain into a tumbler. Fill with fresh cubed ice. Garnish with a thyme sprig.
