CELERIAC SOUP & LEMONGRASS COCKTAIL

 

Olive Oil lovers, this celeriac soup recipe is for you! Paired with a Lemongrass Switchel Cocktail, both of which hugely benefit from an extra drizzle of Citizens Of Soil aromatic and fresh single estate Extra-Virgin Olive Oil.

 

Celeriac Soup Recipe:

Prep Time: 10 mins

Cooking Time: 40 mins

Serves 4

 

 Ingredients:

1 Onion, chopped

1 large Celeriac, peeled and roughly chopped

2 Leeks, chopped

1 large floury Potato, peeled and diced

1 Bay Leaf

1 x Vegetable Stock Cube

2 tbsp Citizens Of Soil Extra-Virgin Olive Oil, plus extra to serve

100 ml Double Cream, plus extra to serve

Sea Salt

Black Pepper

 

Method:

Heat the olive oil in a large saucepan and add the onion and a generous pinch of salt. Sweat over a low heat for 10 minutes until translucent but not browning.

Add the celeriac, leeks, potato and bay leaf and fry over a low heat for a further ten minutes, stirring occasionally.

Add water so that the vegetables are just covered. Add the stock cube and bring to the boil, then turn down the heat and simmer for 20 minutes, or until the vegetables are completely soft and cooked through.

Remove the bay leaf and blitz the mixture using a stick blender - you might like to add extra boiled water here if the soup is too thick. Stir through the double cream and season to taste.

Serve with an extra drizzle of double cream and extra virgin olive oil on top, and some crusty bread.

 

Lemongrass Switchel Cocktail Recipe:

Ingredients:

Lemongrass Tea (we love Good & Proper Loose Leaf)

Off-the-boil water

15ml Ginger Switchel

Citizens Of Soil Olive Oil

 

Method:

First make a lemongrass tea by adding just boiled water to your lemongrass leaves and brew for 4 minutes. Strain and allow to cool (you can store this in the fridge for 2 days once made).

Pour around 125ml of the cooled tea in a wine glass (just below room temperature is perfect for this drink)

Add 15ml of Ginger Switchel and finish by adding a couple of drops of Citizens Of Soil Olive Oil.
